Lentils with octopus and rice


Ingredients:
1 octopus (about 1 kilo) | 250 gr large brown lentils | 100 gr long grained rice | ½ cup of vinegar | 2 medium onions in slices | ½ cup of chopped spring onion | 500 gr ripe tomatoes without skin and seeds.

Instructions:
We put the octopus and the vinegar in a pan. We add enough water for it to be covered and we let it boil for one hour. In another pan we put the lentils together with the onions. We pour 3 cups of water and we boil for 30 minutes. We drain the octopus and we put it aside to cool. We remove its slimy skin and we cut in pieces. We toss the boiled lentils with their broth into an ovenproof utensil. We spread the pieces of the octopus over the lentils. We add the rice, the spring onion, the tomato, the peppers, salt and the black pepper. We sprinkle with the oil and mix gently. We bake it to 180 degrees for about 40 minutes or until the rice swells and the food stays with its oil, only.
