Ingredients:
I octopus (a kilo) | 1 packet of orzo | 1 large onion | 3 mashed tomatoes | 200 gr oil | 1 cup of white wine.
Instructions:
We boil the octopus in a pan adding a cup of white wine. We don’t pour any water as the octopus will extract its own. When the octopus is cool, we remove its suction cups and we cut it into pieces of two centimeters. We put the oil in the frying pan and we sauté the onion. When it is brown we add the tomato and the octopus pieces. We pour one litre of water and we let them boil for five minutes. Then we throw into a clay utensil adding the orzo and one tablespoon of the octopus broth. We bake to 180 degrees for 15 minutes. When all the liquids have been absorbed, the food is ready.
